Royal Icing for gingerbread

Baking cookies for my grandchildren is truly a joy for me! Nothing better than happy little faces covered in crumbs.

I've including 2 version of icing for cookies. The one with corn syrup is glossier but they both taste delicious.

Matte
3 large egg whites beaten 
1/2 tsp Cream of tartar
1 lb icing sugar
Blend all 3 ingredients with a hand mixer until firm & glossy. This recipe will dry out if not covered while using it. Typically, I use several different colours at once, so be sure to cover it while decorating.

Glossy
1/4 cup warm water
1 tbsp light corn syrup
1/4 tsp Almond extract
3 cups icing sugar
Blend  all ingredients with a hand mixer until firm & glossy. This one will dry out too if not covered while using.
